In 2010, 120 olive trees were planted on the "esencial" finca. In addition, there are three olive trees over 100 years old on the finca. The Arroyo family planted 1200 Arbequina and Redondilla olive trees on their farm on the Way of St. James at the same time and managed both fincas together.

In 2015 the first notable amount of olives was harvested and processed to 100% virgin extra aceite de oliva. In 2017 the first import (560 liters) was carried out by Roland Barmet-Garcia into the BOLERO Restaurante in Lucerne. He is proud of his own extra virgin olive oil.

The young olive trees are not treated with pesticides, but are grown organically. The soil has only natural fertilizer.

The November harvest was made by hand and machine-pressed cold. The olive oil has not yet received the organic label because the certification is very expensive and therefore could not be carried out yet.

The acidity is only 0.5%. Virgen extra may contain up to 0.8% acid. Slightly spicy and with little bitterness, the olive oil develops a fantastic taste and is ideal for cold dishes.
