(Black olives pickled in brine) The small Taggiasca olive is the characteristic olive from the hills of Oneglia. Harvested by hand and pickled according to the old tradition, as it was done by the great-grandfather, either in brine with thyme, laurel and rosemary or in extra virgin olive oil and later pitted. This Taggiasca olive grows only in the province of Imperia.
