Kai Shun White utility knife

The all-purpose knife from Kai is particularly suitable for processing fruits and meat. The convex blade of the Kai Shun knife and the manual honing of the all-purpose knife create an exceptional sharpness. This sharpness and the balanced weight of the Kai knife allow effortless work.

Usage

Preliminary work: parry the meat (remove fat and tendons). Hollow out fruits like melons. Light, handy work. Also ideal at the table for cutting salami or dried meat.

professional tip

Buy dried meat in one piece, take a nice wooden board and cut wafer-thin slice of dried meat, just more enjoyment and taste.

resharpening

Resharpening is best done with the ceramic sharpening rod, the KAI electric knife sharpener & polishing unit or the KAI sharpening stone.

(61 ± 1 HRC) is based on VG-10 steel and its properties have been further optimized. Enriched with higher levels of chrome and vanadium than VG-10, it has improved edge retention and corrosion resistance. A higher carbon content makes it harder than other types of steel
