The Shun White Santoku with the light pakka wood handle is the counterpart to the European chef's knife. With the Shun White Santoku you can cut fish, meat, vegetables and fruit. The word "Santoku" comes from the Japanese and means "The Three Virtues".
The thinly ground blade (15 degrees) makes the Shun White Santoku razor sharp, even tomatoes are effortlessly cut into fine slices. The Shun White Santoku has a core made of VG-Max steel, which ensures particularly long cutting durability.
(61 ± 1 HRC) is based on VG-10 steel and its properties have been further optimized. Enriched with higher levels of chrome and vanadium than VG-10, it has improved edge retention and corrosion resistance. A higher carbon content makes it harder than other types of steel
