La Pasta di Aldo, Monte San Giusto
In Monte San Giusto, in the hills of the Marche, where in summer the yellow of the cornfields dominates the landscape, lies the Pastificio ALDO. The name ALDO is significant in itself, as it is made up of the first letters of the two family names Maria Alzapiedi and Luigi Donnari, the founders and managers of the company. The pasta is the result of the union of their two passions for combining good and beautiful things and of their long experience. The knowledge of how to produce perfect pasta was acquired by Maria and Luigi through nights of experimentation, mixing durum wheat semolina and eggs, drying the dough and calculating the exact times to find the optimal results for a dough that produces a first class pasta.
