A cheese knife for Swiss cheese: The cheese knives are forged in the Emmental, the finishing is done by the cutler in the sknife manufactory in Biel. The blade of the cheese knife is made of surgical steel, which makes it extremely rust-resistant.
The handle of the cheese knife is made of fine walnut wood, is stabilized and therefore particularly water-repellent. The cheese knife is a pleasure to hold due to its optimized design. It is delivered in a beautiful old wood box.
In the high-tech steel originally developed for aircraft construction, some of the carbon was replaced by nitrogen. This makes the blades extra hard (58 HRC *, instead of often only 52-56 HRC), edge-holding and up to 4 times more rust-resistant than many common carbon steels. Rough and fine sanding as well as fine deduction are carried out by a master hand: the guarantee for special sharpness and precision.
