Gin Mare comes from the fishing village of Vilanueva, just outside Barcelona. Produced in a small chapel that houses a Florentine copper still with a capacity of 250 litres, the distillery's only product has been given a particularly memorable name that inevitably brings to mind the sea ("Mar/Mare"). Brothers Mark and Manuel Giro Ribot wanted their brand to follow in the footsteps of their father, who invented and marketed the famous Spanish GIN MG. So in 2007, they got in touch with Global Premium Brands and began macerating and distilling 45 botanicals individually in neutral alcohol. After years of tasting, the brothers settled on six main components: the Arbequina olive (15kg are used per batch), citrus fruits (sweet Seville oranges, bitter oranges from Valencia and lemons from Lleida), rosemary from Turkey, thyme from Greece, basil from Italy and juniper berries from the distillery's own property. The team at Gin Mare macerates the citrus peel for a whole year, while the rest of the botanicals are in contact with the alcohol for around 36 hours. Every step of the process up to bottling and labelling the bottles is carried out by hand in this small distillery.
