Uses: Annatto is used to make seasoning sauces as well as seasoning pastes for meat and fish dishes, such as Mexican "mole", and potato cakes. It is also used to colour cheese and butter, and in the past also chocolate, pasta and custard powder
Smell/Taste: Essential oil is responsible for the violet-like odor and spicy taste
